Bump mermaid (11.15.0 -> 11.16.0), @mermaid-js/examples (1.2.0 -> 1.3.0), and @mermaid-js/layout-elk (0.2.1 -> 0.2.2) to their latest versions. Also update the Renovate config so mermaid-related packages are grouped into a single PR, fire on any schedule (not just earlyMondays), and no longer mix into the all-non-major group.
