docs(compose): fix environment variable sentence (#26386)

## Description

Fixes #26385.

Correct the incomplete sentence in the Compose variable interpolation
guide so the relationship between `.env` variables and container
environment variables is clear.

## Validation

- `git diff --check`
- Scoped repository lint was unavailable because the pinned local
dependencies are not installed.
